Chef Daniel Boulud to open restaurant in Singapore

NEW YORK (Reuters Life!) - Famed chef Daniel Boulud will open a restaurant in Singapore, joining five other chefs from around the world to offer fine dining at the $5.5 billion Marina Bay Sands resort and casino under construction.

Boulud made the announcement at his signature Daniel restaurant, one of five the French-born chef owns in New York City. He also has restaurants in Beijing, Palm Beach, Florida, and two in Vancouver, Canada.

He recently agreed to end a five-year relationship with hotelier Steve Wynn and will no longer run the French brasserie in the Wynn hotel in Las Vegas.

Instead he will expand to Singapore’s Marina Bay Sands, being developed by Las Vegas Sands Corp, a complex of three 55-floor hotel towers connected by a 1,200-foot-long (365-meter-long) platform on top.

The “Sky Park” atop the platform will include one the world’s largest outdoor swimming pools and an observation deck with sweeping views of the bay.

The six fine dining restaurants will be on the ground level. The other five chefs have yet to be announced.

Boulud said his Singapore restaurant would resemble his DB Bistro Moderne, a more causal experience than Daniel, which is graded with three Michelin stars.

He plans to offer more Asian dishes in the Singapore restaurant but maintain the Fresh-American bistro theme.

“If I find a wonderful Asian chef who wants to express himself in his own cuisine and I like it, then maybe” it would offer more Asian food,” Boulud said.

He added that he would leave the Wynn hotel next year.

“It was a good five years,” Boulud said of his affiliation with Wynn, the billionaire who developed much of the Las Vegas strip.
